Ushiri is a yakiniku restaurant operated with an official livestock dealer license.
Our owner personally visits producers and markets, selecting only wagyu chosen with a trusted, experienced eye.

What we seek is not a grade or heavy marbling, but that instant moment of delight.
The answer was never-calved heifer wagyu—fine, moist texture with depth of flavor and a long, rich finish.

Our Passion for Wagyu

We serve only rare, never-calved heifer wagyu. Its fine, moist texture is unmistakable from the first bite. Rather than relying on grades or appearance, our owner personally sources beef deemed “truly delicious” through direct visits to producers and markets. The sweetness that spreads as you chew, and the layered umami that follows—made for moments worth remembering.

Korean chilies and fermented seasonings create a deep flavor shaped by tradition and terroir. We never compromise—using aromatic chilies and well-aged gochujang and miso to elevate wagyu’s richness. Seasonal produce from partner farms highlights natural sweetness and crispness, refreshing the palate between bites.
